Wholesome Pea Soup

Healthy, wholesome soup. I love soup so much and eat it almost every day with a sandwich for lunch. What’s not to love? Soup is filling, healthy and really good for you, also very comforting! The thing I like them most about it is if you, like me, have a big appetite, it fills you up and stops you getting hungry so soon after lunch! 🙂

Ingredients:

  1. 1 white onion, finely chopped
  2. 1 tsp butter
  3. 450g frozen peas
  4. 300ml boiling water
  5. 1⁄2 stock cube
  6. Salt/Pepper 

Method:

Heat a large saucepan on low heat and melt the butter. Add the onion with a pinch of salt, the salt helps to break down the onion. Cover and sweat gently until soft and translucent.

Add the peas with the stock. Bring to a boil and simmer for 3-4 minutes. Blitz with a hand blender until smooth. Check seasoning and serve.
