I love this recipe as it’s so versatile. You can have the meatballs with sweet potatoes, rice or a lovely salad for dinner. Add to a wrap with lettuce and some salad, and you’ve a perfect lunch. Turkey Courgette Meatballs with Lemony Garlic Yogurt
Ingredients
- 1 courgette
- 400g turkey mince
- 1 egg white
- 2 spring onions, sliced thinly
- 1 tbsp chopped coriander 200g natural or greek yogurt 1 tbsp lemon juice
- 1 garlic clove, crushed
- 1 tsp olive oil
- 1⁄2 pomegranate
- 1⁄2 cucumber
- Salt/Pepper
Method
-Preheat the oven to 200°C.
-Cut the top and bottom off the courgette and grate on the coarsest side of a box grater. Squeeze off some of the excess moisture of the courgette and discard the liquid.
-Transfer the courgette to a large mixing bowl with the turkey, egg white, spring onion and coriander. Season with salt and pepper.
-Roll the mixture into 15 golf ball sized balls and place on a baking tray lined with parchment paper.
-Bake for 20 minutes until cooked through.
-Meanwhile, make the yogurt. Mix the yogurt with the lemon juice, garlic and olive oil. -Serve the meatballs with the yogurt, pomegranate seeds and some sliced cucumber.
