Ingredients:
  • 1 Onion - diced
  • 3 garlic cloves – grated
  • 3 teaspoons smoked paprika
  • ½ teaspoon chilli flakes
  • 1 pepper, the colour of your choice!
  • 300g basmati rice
  • 1 can of chopped tomatoes or 350ml passata
  • 350ml water
  • 100g corn (frozen or canned or when in season fresh corn on the cob) 1 can of black beans (drain and rinse)
  • Coriander to garnish.
Method:

Using a heavy bottom pan, saute onions in oil until softened but not browned. Add the garlic, spices and chopped peppers, coat in oil and cook for a minute or two, stirring occasionally – keep heat low. Add the rice, tomatoes, water, salt and pepper. Stir to mix all together. Bring to the boil, then turn down to a very low heat – cover with a load and allow to simmer for 10 minutes. Remove the lid and add corn and black beans, stir through gently, cover again and cook for a further 3 minutes.
