Description:

Ingredients:
  1. 1 can red kidney beans, rinsed
  2. 2 cans tuna, drained
  3. 2 medium cucumbers, peeled and cubed
  4. 1 cup cherry tomatoes, cut into pieces
  5. 1 medium pepper, diced
  6. ¼ medium red onion, diced
  7. ¼ cup parsley, chopped
  8. 2 tbsp. lemon juice
  9. 2 tbsp. olive oil
  10. 1 tsp. sea salt or to taste
  11. ¼ tsp. pepper or to taste
Method:

Prepare the ingredients by chopping, cutting, and dicing the vegetables and herbs. Then rinse and drain the beans, as well as the tuna. Place all of the ingredients into a large mixing bowl, including the lemon juice and oil. Mix well. Season with salt and pepper to taste and then serve. There will be a portion left over so fridge the rest for the next day!
