This is gorgeous. Blueberry bread with no added sugar. I love baking when I don’t have to pour loads of sugar into in. Healthy ingredients and this bread won’t leave you feeling sluggish, with a sugar hangover. It’s gorgeous, I hope you enjoy it.
- 2 cups all-purpose flour
- ½ cup of honey
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup Greek yogurt
- 2 eggs
- ½ cup of milk
- 1/2 teaspoon vanilla
- 1 cup fresh blueberries
Preheat oven to 350 F. Grease a 9×5 loaf pan.
In a small bowl, mix together the flour, baking powder and salt. Set aside.
In the bowl of your mixer, beat the eggs. Add the greek yogurt, honey, vanilla and milk. Beat on medium speed until completely combined.
Add the dry ingredients into the wet a little at a time until completely combined. Carefully fold in the blueberries with a spatula. Pour the batter into the loaf pan and bake for 1 hour or until a toothpick inserted into the centre of the bread comes out clean. Let cool before cutting into slices.
