Quick & Easy Traybake Chicken

A great dish for family meals - quick, easy and very tasty. You can choose to have it with veg, salad, or a baked potato. Only 4 ingredients and it takes just 15 minutes to make.

Ingredients:

4 chicken breasts

4 tbsp pesto

250g cherry tomatoes

1 tbsp olive oil

Method:


  1. 1
    Put the chicken breasts in a large, shallow roasting tray and drizzle with olive oil. Grill for 10 mins, then add cherry tomatoes and grill for another 5 mins until chicken is cooked. Drizzle pesto over the top and serve.

    Grill for 10 mins, then add cherry tomatoes and grill for another 5 mins until chicken is cooked.

    Drizzle pesto over the top and serve.

Make double and have it for the next night! The less you have to cook, the easier you may find to stay on track.
