Healthy Breakfast: Avocado Toast & Egg Recipe
This is a delicious breakfast, a lovely combination of protein, good fats and carbohydrates. It takes very little time to make, and can be lovely for a weekend breakfast, if you fancy a change from your normal routine.
2 eggs (fried sunny side up)
2 slices of whole grain bread (toasted)
1 small avocado
1 teaspoon lime juice
sea salt + black pepper (to taste)
parsley (optional for topping)
- 1Prepare toast and fried eggs to personal preference.
- 2Peel and mash avocado with the lime juice, salt and pepper.
- 3Spread avocado evenly on each slice of toast then top each with a fried egg and any additional seasonings you prefer. Serve immediately.

This recipe is perfect with for the weekends, when you fancy something a little different. Another variation instead of eggs: Add tomatoes & basil: Chop up a handful of cherry tomatoes with some shredded fresh basil. Add black pepper or balsamic drizzle (optional)
