These pancakes work great for breakfast or as a snack. They’re a great combination of protein and carbohydrates. They’re really tasty too, I hope you enjoy them,
- 1 egg
- 2 Bananas
- 1⁄2 tsp baking powder
- Butter or oil for frying
- Optional: handful of oats, seeds, nuts, maple syrup Natural yogurt for serving
Mash the bananas with a fork. Add the egg and baking powder, along with any other additional ingredients you want.
Heat a large frying pan on medium heat.
Add 1 tsp butter or oil and tilt the pan to spread. Cook batches of three or four pancakes at a time, using about 2 tbsp of batter in each one. Cook on each side for about 4 minutes, until golden brown. Continue until all of the batter is used up. Serve with some more sliced bananas and natural yogurt.
