Healthy Apple Bread: No Added Sugar

This apple bread is one of the nicest breads and desserts I’ve ever tasted! I’ve had it on it’s own, with butter, and with custard. It is GORGEOUS. I highly recommend you make it and let me know how you get on. The kids and Joe loved it too.

Ingredients:

  • 4 cups any apples, cored and diced
  • 2 large eggs
  • 1 cup grated carrots
  • 1/2 cup maple syrup or honey
  • 2 tbsp oil
  • 1 tsp pure vanilla extract
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 1/4 cups whole wheat or spelt flour

Method: 

Preheat oven to 350 degrees F and spray ceramic non-stick 9 x 5 loaf pan with cooking spray. Set aside. In a large mixing bowl, whisk the eggs for 10 seconds. Add carrots,, maple syrup, oil, vanilla extract, cinnamon, nutmeg, baking powder, baking soda, salt and whisk until well combined. 

Add spelt or whole wheat flour and stir gently just enough to combine. Be careful not to over mix. Add apples and give a few more gentle stirs to combine. Pour batter into prepared loaf pan and level gently with spatula. Bake for 60-70 minutes our until the toothpick inserted in the middle comes out clean.Remove from the oven and let cool for 10 minutes. Then transfer to a cooling rack to cool off almost completely.Cut into 10 slices with serrated bread knife and enjoy!
