When I was 42 pounds heavier, I wasn’t cooking my own meals. I was turning to things like sandwiches to keep me going, lots of coffee, and frozen stuff. Â If you work long hours, you can still cook healthy food.
You just need to be a little bit strategic, and plan before you hit the shops. I know it’s hard with kids, career, family, but if you can get solid on about 6 recipes, and cook double, every time you do cook, you’ll be sorted.
Butternut Squash & Chickpea Tagine… Eat it with a big salad!
Ingredients:
- 1/2 Butternut Squash
- 10 Large tomatoes
- 1 Sliced onion
- 1 Glove Garlic
- qtr tsp turmeric
- qtr tsp white pepper
- qtr tsp nutmeg
- qtr tsp cardamon
- 250ml veg stock
- half tin chickpeas
- bunch coriander
