Beans on Toast (a healthy, delicious version)!

This is an absolutely delicious lunch, and so healthy. Myself and my husband Joe, didn’t add any meat with this, we just had it as is, and it was really gorgeous. Highly recommend this for something a little different.

A lighter version of beans on toast. You can add a protein source like baked chicken breast or pan fried fish.
Serves 2

Ingredients:

  1. 1 can cannellini beans, drained and rinsed
  2. 1 lemon
  3. 1-2 tbsp extra virgin olive oil
  4. Small bunch of fresh parsley, roughly chopped Salt/Pepper
  5. Oat bread, toasted

Method:

Mix the cannellini beans with the parsley, zest and juice of 1⁄2 lemon and olive oil. Season with salt and pepper to taste and serve on toasted bread.
