No bake energy bites: The perfect snack!

WOW, I didn’t think I like peanut butter before I made these, but I loved them. Being stuck for time, and leaving too long gaps between meals only holds you back. You can come home starving and end up over-eating at night. Then you’re caught in this cycle of eating too little in the day, and over-eating at night. Which leads to weight gain, and sometimes a ‘I don’t know where I’m going wrong, sure I hardly eat’ mentality. (This was me for far too long).

Even if you don’t feel hungry initially, get yourself into the habit of 3 meals, and 2 snacks every day. If you make these on a Sunday, and freeze the rest, you won’t be stuck. Use two small ones as one portion… Yum!

Here’s the ingredients:

  • 1/2 cup oats
  • 1 cup cranberries & pistachios
  • 2/3 cup creamy peanut butter
  • 1/4 cup honey

Mix in a bowl, make little bite sized balls, but them in the fridge for an hour and voila, they’re done.
